Will's Pimento Cheese Spread (S1E5)
Welcome to the Diabetic-Friendly Kitchen! In this episode, we show how to make a
quick, tasty treat: pimento cheese spread. It's easy to make, can be adjusted to
suit even finicky eaters, and has very litle sugar. It makes an excellent condiment
- try it on a burger or deli sandwich - and works just as well as an entree
ingredient - try it melted between slices of sourdough for a grilled cheese you'll
remember for a long time to come.
That's right - we -can- make more than just desserts!

Ingredients
8 oz cheddar cheese, shredded
8 oz muenster cheese, shredded
1 jar (4 oz) diced pimentos, drained (and finely chopped if you like)
1/3c mustard (dijon or stone-ground are best - use your favorite!)
1/4c mayonnaise
The Process
1. Grate the cheeses from blocks for the best flavor.
2. Mix everything together thoroughly. If the mixture is too dry, add a little more mayonnaise.
3. Serve and enjoy! Refrigerate the leftovers.
